Last nights dinner was a vegetable stir fry with egg noodles and tofu ? I try to cook mostly plant based at least twice a week and try to make sure we’re getting enough variety and that rainbow ? of colour all nutritionists bang on about. Why? Well, variety is key to keeping our gut microbes happy and diverse.. Which in turn has all sorts of positive effects on our health such as keeping our bowels ?moving, our immune systems strong and via that gut-brain axis maintaining a positive state of mind too all of which are so relevant right now.
Vegetables included here: red peppers, red onion, spinach, cauliflower, bok choy and some garlic of course ?
